I used to drop the cheese in while the noodles boiled and it turned into this gluey mess I just tolerated because that is how my roommate in Toledo did it back in 2013. Then my buddy Jin made me a bowl and put the cheese on top right at the end, off the heat, so it melted into a creamy layer instead of vanishing into the water. I felt like a fool for 10 years of soggy orange soup, and honestly a fried egg on top fixes it even more. Does anyone else add their cheese at the end or am I late to my own kitchen?
Reminds me of my uncle who grilled steaks for 20 years with the lid open the whole time. Flames shooting up, charring the outside, raw in the middle, and he'd stand there proud as hell.
