Finally picked peanut oil over canola for chicken and it made a real difference
I've been using canola for years because it's cheap and easy to find. But last weekend I decided to try peanut oil for my fried chicken. Used about 2 quarts in my Dutch oven at 350. The crust came out way crispier and the flavor was nutty but not overpowering. My family even noticed without me saying anything. Has anyone else switched oils and had that kind of moment where you wish you'd done it sooner?

Oh, "my family even noticed without me saying anything" - that's the real test right there. I switched from vegetable oil to peanut oil for stir fry a few years back and it was like a light bulb moment. The smoke point is way higher so you get that proper sear without everything smelling like a fast food joint. And the nutty flavor just works with chicken, doesn't fight with the seasoning like canola can. Once you go peanut it's hard to go back, it's a game changer for frying.

The "smelled like a fast food joint" thing hits close to home. I used peanut oil once and my neighbor knocked on my door thinking I was running a pop-up restaurant out of my kitchen.
