I finally gave up on store bought pancake batter for frying, the box stuff is 80% air
Used the box mix for years because my mom did and it always made decent onion rings. Last week I ran out and made my own with just flour, cornstarch, and cold seltzer, and the crust stayed crunchy for 20 minutes instead of going soft at 5. Anyone else notice the box stuff is mostly just stuff to make it rise, or is that just me?
Switched to seltzer a while back too and never went back. The bubbles do the work so you don't need all that baking powder junk they pack in the box. Cold is key though, warm batter fries up greasy every time.
