Took me 5 hours to figure out why my onion rings were soggy
I kept getting limp onion rings no matter what I did with the batter. Finally realized my oil temp was dropping too low because I was crowding the basket. Has anyone else dealt with temperature swings ruining a batch?

@sagew50 you're RIGHT that smaller batches help but that's not the whole picture. The real issue is the oil temperature recovers WAY slower than people think. Even small batches can drop 20-30 degrees if you dump them in all at once. I learned the hard way you gotta let the oil come back to temp BETWEEN batches too, not just crowd less. Another thing nobody talks about is moisture on the onion rings before they hit the oil. If you don't pat them bone dry, the steam basically fights the oil and makes everything sad. So yeah, smaller batches AND making sure the rings are dry AND waiting for the oil to recover. @sagew50 it's like three things you gotta do not just one.
