Tried my old boss's trick of freezing pickles before battering them. Huge mistake.

I used to work at this pub in Austin called The Side Step. Head fry cook swore by freezing pickle spears before dipping them in batter. Said it kept the inside cold so the batter got extra crispy before the pickle turned to mush. Tried it last night at home and the damn things exploded in the oil. Pickle juice everywhere, oil splattered all over my stove. Almost took out my left eye. Anybody else had a batter disaster from some tip that sounded good on paper?

Three spears in and my entire kitchen looked like a crime scene. The pickle juice was on the ceiling somehow. I had a welt on my arm for a week from one of those hot oil blobs. Next time I'll just trust standard batter and cold pickles straight from the fridge. The whole frozen pickle thing is a fast track to a trip to urgent care.

Oh no, I'm so sorry that happened to you. A welt on the arm sounds miserable, your kitchen must have looked like a war zone.
