Hot take: Switching to airlock jars fixed my mold issues

My ferments kept going bad with regular jars. Once I used airlock jars, they stayed good every time. What tips do you have for avoiding mold?

Most people forget that the type of salt changes everything. Kosher salt takes up more space than fine sea salt, so a volume measure can be way off. You need to weigh your salt to get the ratio right, especially for big batches. If you just use cups, your ferment might be too salty or not safe. Weight in grams removes the guesswork and keeps things consistent. It's a small step that makes a huge difference in the end product.
