My sauerkraut in a 2-gallon crock overflowed all over my garage floor last Tuesday.

I misjudged the headspace and the brine bubbled out overnight. Has anyone else had a big mess like this, and how do you prevent it?

Leave more headspace next time.

Absolutely, that's a lesson you only need to learn once the hard way. I once filled a container to the very top with hot soup, then tried to carry it across the kitchen. Let's just say my floor got a deep clean that night. Now I leave a huge gap, like an inch or two, because stuff always sloshes around. It's not worth the mess or the burned fingers.
