PSA: My kimchi from the Seattle market blew up in my fridge
I bought a jar of locally made kimchi from Pike Place Market last week, and it was still actively fermenting when I put it in the fridge. Woke up to a loud pop and kimchi juice all over the shelf. Learned the hard way that even refrigerated, some ferments need burping or a loose lid for the first few days. Anyone else had a jar bomb from a store-bought ferment?

Wait, they sold you a jar that was still bubbling at the market? That's wild. I always figured the stuff on the shelf was done fermenting. Makes me nervous about my own jar from the Korean grocery now. Guess I'm cracking the lid open over the sink tonight just in case.

Man, that's rough. I had a jar of kimchi from a corner store once that practically exploded when I opened it. Got spicy cabbage juice all over my kitchen ceiling. Now I always loosen the lid slowly and point it away from my face, just in case. That bubbling means it's still really active. Good call on using the sink.
