Gave cauliflower rice a shot. It was a soggy mess.
I heard so much about cauliflower rice being a healthy swap. I bought a head of cauliflower and tried to rice it myself. It took forever and made a huge mess in my kitchen. When I cooked it, the texture was wet and mushy. For all the effort, I'd rather just eat real rice in smaller portions. I think people praise it too much without admitting the downsides.

Man, that soggy mess is the worst. Did you try squeezing all the water out of the riced cauliflower with a clean towel before you cooked it? That step is a total game changer for texture, but nobody seems to talk about it.

Sheesh, it's just a weird veggie side dish, not a life decision. People treat these food trends like they're major moral victories or failures. Maybe we all just need to calm down about substitute foods.

Totally get where you're coming from, but for some folks it really is a life decision. Think about people with diabetes who need to watch their carbs, or someone with celiac disease who can't have regular grains. That soggy cauliflower rice might be their only safe option for a "rice" bowl. It's easy to see it as just a trend when you have other choices.
