I never got the fuss about artichokes until I had them grilled.
Artichokes always seemed like too much work for little reward. A friend served them grilled with lemon butter at a barbecue. The smoky flavor and tender leaves were a game changer. I buy them fresh every chance I get now.

Actually, @nancy500, you don't need to pre-boil them at all, just trim and steam first.

You mentioned the smoky flavor. What's your go-to method for grilling them to get them that tender?

Nah I gotta be honest, grilling them is way too much hassle for what you get lol. All that trimming and pre boiling just to burn the outside half the time. I tried it twice and it's a 45 minute project for a side dish that just tastes like smoke and lemon juice. My family still prefers them straight from the jar marinated, way easier and basically the same flavor for way less work.
