My brother-in-law said my scrambled eggs were 'rubbery' and I'm still mad about it

He told me to stop cooking them on high heat and scrambling them in the pan. Now I do low and slow, stirring constantly with a spatula. They're way creamier, but I'll never admit he was right. Anyone got a good trick for adding cheese without it turning into a greasy mess?
