My neighbor in apartment 3B said putting mayo on the outside of a grilled cheese is 'cheating' and I had to think about that for a week.

That's a serious charge to level at someone. The mayo method just gives a better, more even crust. Your neighbor is wrong.

Oh man, I feel that so hard. My first few tries at grilled cheese were total disasters. I used way too much butter and it pooled in the pan, making the bread soggy in the middle. The cheese wasn't even melted. Using mayo was a total game changer for me, it just works every single time. Calling it cheating is just silly.

Honestly, my grilled cheese technique is so bad that using mayo would be a step up. Last time I tried, I managed to weld the bread to the pan. So maybe cheating is the only way I can win.
