Update: My attempt at air fryer 'fried' pickles went a bit sideways
I tried making those beer-battered fried pickles in my air fryer last weekend, thinking it would be a lighter version of the bar food I miss. I used a local craft lager in the batter and the usual breading steps. The problem was, the batter just slid right off the pickle slices as soon as the hot air hit them. I ended up with a tray of sad, naked pickles and a bunch of burnt batter crumbs stuck to the basket. In my experience, a super thick batter just doesn't work with the air fryer's fan. I learned you really need a dry coating, like just seasoned panko, or maybe a very thick paste. Has anyone else figured out a way to get a real battered texture to stick without a deep fryer?

Actually saw a food blog post about this exact problem. They said you have to freeze the battered pickles for like 20 minutes before they go in the air fryer. It lets the coating set up so the fan doesn't blow it all off. I mean, it makes sense because that's basically what happens with frozen store-bought stuff. Maybe try a super cold batter too, idk. The blog also said a lighter spray of oil helps it crisp without sliding.
