Just wasted $50 on a 'professional' cake leveler that snapped on the first layer

I was decorating a two-tier wedding cake for a friend and bought this fancy stainless steel leveler online. The thin wire snapped halfway through the first vanilla sponge, leaving a jagged cut and crumbs everywhere. What do you guys actually use to get perfectly even layers without breaking the bank?

Ugh, that's the worst. Those wire levelers are junk for anything denser than angel food cake. I use a long serrated knife, the kind for bread. Mark the side of the cake with toothpicks as a guide, then use a slow sawing motion. It takes a steady hand, but you get a clean cut every time and the knife cost me maybe fifteen bucks.

Sounds like that "professional" tool was made for professional disappointment. A good serrated knife never lets you down like that.

My 12-inch bread knife from a restaurant supply store has cut hundreds of layers. Just go slow and use a ruler for guide marks.
