My stand mixer tried to walk off the counter during a honey brioche batch

Last Sunday I was making a double batch of honey brioche for a church bake sale and halfway through kneading the dough, my old KitchenAid started doing the electric slide across the counter. The dough was so stiff and sticky from the extra honey that the mixer literally hopped and banged its way toward the edge. I had to grab the bowl with one hand and hold the machine down with my elbow while it kept chugging. By the time it finished, there was flour and butter splattered all over the walls and my cat hid under the couch for an hour. I let the dough rest for 20 minutes before shaping and it actually turned out fine, but I learned my lesson about overloading the mixer. Anyone else ever had to wrestle their appliance mid-knead?

Oh man, I feel your pain. Had basically the same thing happen with a sticky cinnamon roll dough and learned to just do smaller batches or add the flour in stages so it's not so much of a workout for the machine.

Yeah, "add the flour in stages" is the real pro tip right there. I used to dump it all in at once and my mixer would just sit there struggling, making this awful grinding noise. Now I do it like a third at a time, let it mix in, then add more. Total game changer. Also learned the hard way that warm ingredients make dough way stickier than you'd expect, especially when you're in a hurry.
