Warning: I nearly ruined a whole wedding cake at my sister's reception in Austin

I was making a three-tier cake for her big day at some fancy venue downtown and the AC was blasting right on the buttercream... within 20 minutes it was cracking and sliding off. Has anyone else dealt with sudden temperature swings ruining their icing like that?

You ever had frosting just straight up abandon ship mid-event? That happened to me at my cousin's backyard wedding in July. We thought the tent would be fine but then the sun came out and the buttercream started sweating like crazy. I ended up having to scrape off the whole top tier and redo it with a ganache that could handle the heat. Buttercream is so picky about temps, I swear it's like trying to frost a cake in a war zone sometimes.

Chill your cake layers before stacking? That trick saves mine every time.
