Chatted with a competitor who swears by wrapping his pork butt in peach paper, not foil, after the stall

He said the paper lets more smoke through and keeps the bark from getting soggy, which totally makes sense now. Anyone else made that switch and noticed a difference?

Tried peach paper once and the bark was way better, which proves @johnson.daniel wrong about the details not mattering.

My last cook, a 10-pound butt, proved the paper thing. The bark stayed dark and crunchy, not soft like with foil. It's a real texture difference, not just a small detail. Sorry @johnson.daniel, but the feel of that perfect bark matters. It's the best part of the whole plate.

Honestly, it's just pork. The foil versus paper debate gets way overblown. Both methods get you a finished butt, the difference in the bark isn't that huge. People get too caught up in the tiny details sometimes.
