Okay, hanging them up is a huge upgrade from a pile, for sure. But when you say you can "start cutting right away," that jumped out at me. You still gotta grab a cutting board first, right. That's always step one for me, get the board then the knife. Going straight for the knife just sounds like an accident waiting to happen. The strip gets the tool ready, but the surface setup is what really gets you cooking.
Totally see where you're coming from, @troylane. I used to just grab the knife first too, felt so ready to go, but then you're just standing there holding a sharp thing with nowhere to put the food. You're right, it completely trips up the whole flow. Now the board is always my absolute first move, no question. It just makes the whole process feel safer and way more put together.
