I worked in a butcher shop for five years and we always had a backup plan for holiday orders. One time we had a whole case of ribeyes get damaged in transit. We called our supplier, got a new delivery overnight, and stayed late to cut them. The customer never knew there was a problem. Sometimes you just have to eat the cost of an emergency fix to make it right.

Absolutely, that's the only way to handle it. You gotta have a backup supplier on speed dial, even if their prices are a bit higher for emergencies. I've seen guys try to cheap out and substitute lower quality stuff, and it always comes back to bite them. The good will you save by just taking the hit is worth way more than the money you lose. Customers remember when you fix a problem they never even knew about.
