I used to eyeball espresso doses until I weighed 12 shots in a row last Tuesday
For two years I just scooped and tamped by feel, thinking it was close enough. Then I actually put a scale under my portafilter and saw every shot was off by at least 1.5 grams. That morning I lost three customers back to back because drinks came out sour or bitter. Now I weigh every single dose before pulling, and my consistency is night and day. Has anyone else caught themselves slipping on the little stuff like this?

Ha, right?! It's funny how once you start paying attention to one little thing, it's like you can't unsee all the other small stuff that actually matters a lot. Like I never used to measure my coffee and now I'm the same way with salt when I cook... a little pinch here and there and suddenly dinner is either amazing or a salt lick. Same with my phone charger, I never thought about where I left it until I had to go hunting for it every morning. It's like life is just a series of tiny decisions that add up.
