I finally tried making my own pizza dough with store brand flour and it actually came out BETTER than name brand
My cheap Aldi flour and yeast combo made a crust that was crispier and chewier than my usual Gold Medal batch, and since I spent only $1.80 total versus $4.50, has anyone else noticed store brand flour rising just as well or better in a pinch?

Dude YES, same here! I grabbed some random store brand flour from Lidl last week cause it was on sale and my bread loaf came out way fluffier than with the expensive stuff. It's wild how much you can save and still get a better result lol.

My Aldi flour made my pizza crust way crispier than King Arthur ever did too.

Right! That crust thing is real. It's not just in your head either. Lower protein flours like the store brands actually absorb less water so they crisp up faster and dont get chewy. King Arthur's all purpose is like 11.7% protein which is great for bread but overkill for pizza. You want that snap when you bite into it not a workout for your jaw.
