Why doesn't anyone talk about how cold brew can actually taste bitter if you steep it too long?
I let a batch sit for 30 hours instead of 24 and it came out so harsh I had to dump the whole half gallon down the sink, so now I'm wondering if anyone else has messed up their ratios or steep times worse than me.

pH is the thing nobody looks at" yeah because most of us are trying to make coffee, not start a science fair project. But honestly, now I kind of want to test my tap water just to see if it'll gaslight me into another ruined batch.

pH is the thing nobody looks at. I use a cheap meter from Amazon now. If your water's too soft it extracts more bitter compounds way faster. My first 30 hour batch was with filtered tap water and it was fine. Switched to store bought distilled once and it ruined everything in 18 hours.

Is it really that serious though? I've used distilled water plenty of times without any issues and my cold brew turned out fine. Seems like one bad batch might be more about something else going wrong than the water itself.
