That one comment about my oil temp changed everything I do

I was deep frying chicken wings last month and posted a picture in here with my setup. Someone called me out saying my oil was way too hot because the batter was browning before the chicken was cooked through. They said I probably had it around 400 instead of 350. I was sure I was doing it right for years. So I went out and bought a $12 probe thermometer since my fryer dial is super inaccurate. Turns out my oil was hitting 420 every time. Dialed it back to 350 and my wings come out perfect now with that light golden crust instead of dark burnt looking spots. Has anyone else had to recheck their thermometer after relying on the fryer knob for too long?

Figured I'd just trust the universe and my questionable hearing to sort it out eventually.

Honestly I gotta disagree with ya there... sometimes ignorance is bliss you know? If the system's been running fine for years without any tweaks then maybe the universe really did sort it out. Overthinking and second-guessing can mess up a good thing way faster than just leaving it alone. People get too caught up in optimizing everything when sometimes the best approach is to just let it ride. Plus if it ain't broke don't fix it... that old saying exists for a reason.
