Finally chose a 12-inch knife over a 10-inch for a big ceiling job last week and it cut my taping time by at least a third.
I was skeptical about the extra weight, but the longer stroke meant way fewer seams to blend on that 20x30 foot garage ceiling in Phoenix.

Try a 14-inch knife next time for even longer strokes and fewer seams.

Bigger knives just make a mess, alice336.

Ever try a 12-inch offset bread knife? alice336 is onto something with longer blades. A 14-inch is overkill for most home stuff. I used a big slicer on a brisket once. Clean cut, no sawing. But you need the space to handle it.
