My sauerkraut disaster taught me to never skip the airlock again

Tbh, I figured the airlock was unnecessary and skipped it to save time. After a batch got fuzzy with mold, a friend insisted I try using one. Seeing how it kept the bad stuff out while letting gas escape flipped my thinking. Now I see it as essential, and my ferments turn out great every time.

Yeah that weird white film thing happened to my buddy's kombucha. He got lazy and just covered the jar with a cloth, thought it was fine. Whole batch got vinegary and slimy, he was so bummed.

Oh, my friend Jen had a similar thing with her homebrew. One batch got this weird white film on top, and she didn't notice for weeks. When she finally opened it, the smell was awful, like rotten fruit. She had to toss the whole thing and start from scratch.
