I always thought my sourdough was good until I tried a different feeding schedule

For years I fed my starter once a day and my bread was fine, but a bit flat. Last month I switched to feeding it twice a day, at 8am and 8pm, and the rise and flavor are way better. It's like my starter finally woke up and got really active. Has anyone else seen big changes from tweaking their starter routine?

Rubyschmidt's got a good point there. My kitchen sits around 68 degrees in the winter, and I learned the hard way that my starter needs a solid 12 hour feeding window or it gets sluggish. I actually switched to a 1:2:2 ratio by weight after my old one kept falling flat on day 3. That extra warmth really does make all the difference in how fast it eats.

Wait you were only feeding it once a DAY? That's wild, mine would totally starve. I have to do it twice just to keep it from going nuts and overflowing the jar. Your old bread must have been so patient.
