Forget the angle for a second and feel the dough's skin. A tight, cold loaf fights a shallow cut. I proof mine in the fridge overnight, and that cold surface makes the blade skate right where I want it. It's like scoring leather versus warm clay. The temperature gives you that clean pull without tearing.

So you're telling me I've been wasting a whole day just because I was scared of the fast stuff? Why do we always assume the slower way is the better way? I guess it takes someone else coming in to show you the obvious fix. Now I feel like I need to go back and bill all my old clients for that extra day.

What did the service even say to defend that kind of writing? Did they try to tell you it was more "professional" that way? It's wild they get paid to strip all the personality out. I bet they have a template and just fill in the blanks with buzzwords. Makes you wonder if they've ever actually gotten someone a job.

inWorking on a big Reno job last spring changed my mind about using a hawk and trowel for taping.
Man, preach. Tried a hawk on a whole basement once, my shoulder was toast for two days. The speed just isn't there compared to a box. I watched a guy who's been at it thirty years make it look easy, but for me it's like learning to write with my other hand. The finish looked the same, but I burned so much extra time. Why fight the tool that gets you done and out the door?
