Just realized my neighbor's kombucha comment changed my whole process
He said 'you're overthinking the sugar, it's just food for the bugs' while we were talking over the fence last Tuesday. I was always so precise with my measurements, but now I just eyeball it and my last batch came out perfect. Anyone else get stuck on being too exact before?

My old recipe book had a whole page about sugar types and grams per liter. I was basically running a tiny lab in my kitchen. Now I just dump some in until it looks right, like I'm making sweet tea for ghosts. The SCOBY doesn't care if it's 38 grams or a handful.

Heard a podcast say the SCOBY actually eats most of the sugar anyway, so @margaretm23 is right about not needing to be exact.

Same here, I've quit measuring and my kombucha actually tastes better now.
