My aunt swore by using a cabbage leaf on top of my sauerkraut
She told me last month to put a whole outer leaf over the shredded cabbage to keep everything submerged. I tried it on a 2-liter jar of kraut, and it totally worked, no mold at all. The leaf created a perfect seal under the weight. I just peeled it off after 3 weeks and the kraut underneath was perfect. Has anyone else tried this trick or do you use something different?

Oh wow, that's actually a really cool idea. I read about that method on a gardening blog a while back, they said the big leaf works like a natural lid to block air. Some people use things like a glass weight or a zip-top bag filled with brine, but the cabbage leaf seems way simpler and you don't have to buy anything extra. I mean, it makes total sense when you think about it, it's just more cabbage. Might have to try that next time.

It's a neat trick for sure. The leaf method works well for small batches at home. Big fan of using what you already have.
