My old crock versus a new Fido jar for sauerkraut

I made kraut for years in a basic ceramic crock from my grandma. Last month, I switched to a 2-liter Fido jar with a wire bail. The difference is huge. The jar's seal kept everything under the brine perfectly, no mold at all. My crock always needed me to check the water seal every few days. Which method do you think is better for a beginner?

Forget the gear for a second. The real difference is how much you trust it. I was always stressed my crock would fail, but the jar just sits there doing its thing (which is way better for my nerves).

Honestly, the jar is a solid choice for a beginner because it's simple. But calling the crock method worse isn't quite right. That water seal is a proven, traditional way to let gas escape while keeping air out. The jar just automates it. Both work if you do them right.
