Totally agree about leaving more fat for a home cook. Did the same thing last time, just kept it simple and didn't trim too much. Made a huge difference in keeping it moist.

inTIL a $20 tack cloth beats the heck out of a shop rag for pre-stain prep.
Oh man, that's the worst. I've had luck keeping tack cloths in a mason jar with the lid on tight. The real trick is to not buy the ones from the big box store, they're garbage. Find a local paint supplier, their stuff lasts way longer.

inUnpopular opinion: I used to think a 4-inch grinder was fine for everything until I saw a guy in Omaha zip through a 3/4-inch bevel with a 7-inch in half the time.
Burned through three wheels on one job? That's wild. I've been running Pferd cut-off wheels on my big grinder for months now and they just don't die. The difference in how long they last is crazy.

inJust realized I might have mislabeled a ceramic sherd from a dig in Tucson last month
My buddy got totally mixed up last season because he was trying to remember slip colors from memory. He swore a certain mushroom was safe, but his photo showed a totally different color gill. We had to double-check three different guides before we were sure. It was a close call that could have been bad. A simple card like yours would have saved him a lot of worry.
