I thought sous vide was just a fancy way to boil meat until my brother made a steak that tasted like a $50 restaurant meal.

He cooked a cheap cut for 18 hours in his apartment kitchen and it was the most tender thing I've ever eaten. Has anyone else been totally wrong about a cooking gadget?

Totally wrote off pressure cookers as scary bomb pots until my chili cooked in 20 minutes flat. My instant pot basically lives on the counter now because I was so wrong. That sous vide story is exactly how I felt, like a fancy kitchen toy suddenly became essential. Guess we all have that one gadget we judged too fast.
