Tried making a 'quick' hollandaise in a blender and got a science experiment

Last Sunday brunch rush, I was down a cook and decided to try that viral 'one-minute blender hollandaise' trick to save time. I dumped 3 egg yolks, a cup of melted butter, lemon juice, and a pinch of cayenne into our Vitamix on high. Instead of a smooth sauce, it instantly turned into a weird, grainy, broken mess that looked like yellow cottage cheese. The heat from the blender motor basically cooked the eggs in the worst way. I had to start over from scratch with a double boiler, which took 15 minutes and put us in the weeds. Lesson learned: sometimes the old school methods are the only right way. Has anyone actually made a decent blender hollandaise, or is it all just internet lies?

Serious question, has anyone else had a dredge pump just... stop on them after hitting a weird patch of sediment?

I was working a channel in the Mobile River last month and the suction head jammed solid on what felt like a layer of old clay and gravel, something the survey didn't show. What's your go-to method for clearing a sudden blockage like that without tearing everything down?

Tried a free password manager and it locked me out for two days

I finally gave in and tried Bitwarden last month after hearing about it online. Set it up, let it import all my old passwords, and felt pretty good. Then my phone died and I needed to log into my bank on my laptop. I couldn't remember the master password I'd just created. The recovery process took 48 hours because I hadn't set up the backup codes properly. The lesson was obvious but I missed it: a tool is only as strong as your setup. Has anyone else had a rough start with a password manager and found a simple way to avoid this?

That time a 2-inch weld on a steam drum in Toledo cracked during hydro

Honestly, it was my second week on a big plant job in Toledo, and we were doing the final hydro test on a new steam drum. The pressure hit 450 psi and we heard this sharp pop like a gunshot. Found a 2-inch crack right on a longitudinal seam weld that passed visual. We had to drop the pressure fast, drain the whole thing, and grind it out. The weld looked good but the base metal right next to it had a tiny slag inclusion we missed. Ended up being a 14-hour day to re-prep, re-weld, and re-test. Anyone else ever have a test go bad because of something hiding in the base metal?
