Rant: My barista friend in Portland told me I was overthinking my pour-over technique and to just focus on the water being hot enough, which honestly fixed my morning brew after months of inconsistent cups.
I'd been fussing with grind size and timing for ages, but she pointed out my electric kettle was dropping below 195 degrees by the time I started pouring, so now I pre-heat it way more and the difference is wild, has anyone else had a simple fix like that slap them in the face?

My roommate swore his coffee was sour until he cleaned his grinder.

That's a classic move, @casey16. Old coffee oils in the grinder can totally wreck a fresh bag of beans. Had a friend who kept buying fancy coffee but hated the taste. Turned out his machine's water tank was full of gross white scale. Cleaned it with vinegar and he acted like he discovered a whole new drink. Sometimes the fix is way simpler than you think.
