But have you seen the research on how the Roman stuff was actually made? I read they used way more guts and blood, not just whole fish. That's a totally different process from most modern fish sauce, which is cleaner. So it might not be the same thing at all, just a similar idea.

People act like the world ends if a video buffers for ten seconds. It's a coffee shop, not a data center. Most folks are just checking email or social media anyway. The whole "you'll lose customers" thing feels overblown. Sure, it's nice to have, but comparing it to chairs is a stretch. A lot of places get by just fine on basic connections.
