PSA: My brisket probe read 195 degrees after 8 hours and I panicked

I was smoking a 14 pound packer on my offset last Saturday, aiming for the usual 203. At the 8 hour mark, my Thermoworks probe hit 195 in the flat and the point felt like butter. I pulled it, let it rest for 2 hours in a cooler, and it was the most tender brisket I've ever made. I always thought you HAD to hit that magic 203 number, but the feel matters more. Has anyone else had a brisket finish perfectly at a lower temp?

My local shop had a 'silent auction' for a rare variant and it got weird

Last Thursday, my comic shop in Phoenix announced a silent auction for a 1:100 variant cover. The rule was you wrote your bid on a slip of paper. I put down $75. I came back Saturday to find the owner laughing, holding two identical slips. Another guy, who looked like a normal dad, also bid $75. The owner made us arm wrestle for it in the middle of the store. I lost in about 10 seconds. Has a comic shop ever made you settle something with a dumb contest instead of just flipping a coin?

My $40 airlock mistake with a new batch of sauerkraut

I was so excited to start a big batch of red cabbage sauerkraut last month. I saw these fancy glass airlocks online and thought they were a must-have for a better ferment. I spent about $40 on a set of three, thinking it was a smart upgrade from my old jar lids. Well, after two weeks, I checked the crock and found mold. The airlock had a tiny crack I didn't see when it arrived, so it wasn't sealing right at all. All that cabbage, about five pounds of it, was ruined. I felt so dumb for not just sticking with my simple method that always worked before. The worst part was the smell when I opened it up. Has anyone else had a problem with these special airlocks, or should I just go back to burping the jar?

Appreciation post: I chose the Fluke 87V over a cheaper meter for my bench at the regional airport, and it saved me a whole afternoon chasing a phantom voltage drop in a Citation's nav system.

Has anyone else had a specific tool choice pay off in a big way like that, or do you think I just got lucky this time?

Update: My approach to diagnosing fridge compressor issues shifted completely after a 2022 training seminar.

I used to just listen for the hum and check for power, but now I always check the PTC relay and capacitor first with a multimeter. It saves about 20 minutes per job. Anyone else find this new method faster?

I was sure it was junk when it first showed up in our shop about fifteen years back. The old solvent stuff was tough, it covered well, and we knew how to work with it. This new stuff looked thin, dried weird, and the color match seemed off. Then we got a job for a big fleet of electric vans for a local delivery company, and their specs required water-based. I grumbled through the whole first van. But after spraying a few, I saw the clear coat laid down smoother with less orange peel. The booth cleanup was easier, just soap and water, and my head didn't throb at the end of the day. My date at The Rusty Anchor last Friday went sideways over the bill

So I'm out with this guy, Mark, and the check comes. He just stares at it for like a full minute, then says 'So, how do you want to do this?' I had to choose between suggesting we split it or just paying the whole $78 myself to end the awkwardness. I went with splitting, but the whole vibe was dead after that. Anyone else had a date ruined by the bill moment?

My uncle told me to stop burping my hot sauce jars so much

Honestly, I was making a fermented habanero sauce and my uncle, who's been brewing his own beer for like 20 years, told me to just leave the lids on loose and stop opening them to 'burp' them every single day. He said the CO2 would build up and push out any oxygen anyway, and opening it just lets bad stuff in. I tried it with two batches. The one I burped daily got a weird white film on top after about a week. The one I just left alone with a loosely screwed lid fermented perfectly for a full month with no issues at all. It was way less work and the flavor was deeper. I guess I was being too nervous and messing with it. Has anyone else found that less fiddling gives better results with pepper mashes?

I signed up for one of those meal kit services with a cheap first box offer, thinking I'd get a few dinners for about $20. After the first week, they charged my card $80 for the next box because I forgot to cancel in their tiny 3-day window. I had to call and argue for 15 minutes just to get a partial refund. Just found out the first elevator safety brake was inspired by a stagecoach

I was reading an old trade magazine from the 1950s at a library in Pittsburgh. It said Elisha Otis got the idea for his safety catch from a spring-loaded mechanism used to keep stagecoach doors shut. He basically adapted a wagon part to stop a falling elevator car. I always figured it was some brand new invention, not a repurposed piece of horse-drawn carriage hardware. Has anyone else come across other weird bits of elevator history like that?
